About Our Tandoori Chicken in Toronto

Scoring matters more than most people realise. Cutting into the flesh lets the marinade reach the bone, which is the difference between chicken that is seasoned on the surface and chicken that tastes of spice all the way through. Ours rests overnight in hung yogurt with lemon, ginger, garlic, Kashmiri chilli for colour and roasted cumin and coriander for depth.

In the tandoor, the pieces hang over live charcoal. Fat drips onto the coals and rises back as smoke, and the dry radiant heat firms the outside quickly so the inside stays moist. It comes out charred at the edges, deep red, and served simply with onion, lemon and mint chutney — nothing else is needed.
