Paneer Tikka is the vegetarian dish we are happiest to be judged on. Thick cubes of fresh paneer are marinated in spiced hung yogurt with peppers and onion, skewered, and charred in the tandoor until the edges blister and the centre stays soft. Good paneer tikka depends on the cheese. Paneer that is too firm turns rubbery over live coals and paneer that is too soft falls off the skewer, so we cut ours thick and marinate it just long enough for the yogurt, ginger, garlic, ajwain and roasted spices to soak in without breaking it down.
Peppers and onion go on the skewer between the cubes, which is not only for colour: they sweeten and char at a similar rate and keep the paneer from drying out. Everything comes off the fire together and is finished with chaat masala and lime.
